Red Split Lentils are one of the fastest cooking members of the lentil family. The do not need to be pre-soaked and, because they are split by removing the skins so they split naturally in half, they cook very quickly.

Lentils provide around 30% of their calories from protein making them a healthy choice. This means that lentils have the third-highest level of protein, by weight, of any legume or nut, after soybeans and hemp. Proteins include the essential amino acids isoleucine and lysine. Red Lentils also contain folate, vitamin B1, minerals and dietary fibre.
